Mi Finquita is a project founded by Ratibor Hartmann and his wife Tessie. They use their experience and knowledge from running the famous Finca Hartmann to help other neighbouring farmers to produce, process and sell their coffees under the brand “Mi Finquita” which means “My small farm”.
Mi Finquita is about “designing” coffees, applying science to traditional and innovative fermentation methods. The results are a serious of limited specialty coffee lots, with exotic flavor profiles.
The management of all the farms is done in harmony with the environment, with ecologically friendly products used in minimum quantities and only in cases necessary.
The farms are located in and around Los Pozos, in the Chiriquí Province of Panama, between 1.650- 1.900 masl. They currently produce varietals like Caturra, Bourbon and Geisha. The climate is mild tropical with temperature as low as 4°C at night and sometimes even frost and ice. The annual averages are 18°C during the day, 15°C during the morning and a maximum of 26°C in the afternoons during the summer.
This lot was a combined fermentation of whole cherries aerobic for 48h, it was then pulped and put through a 2nd fermentation in an anaerobic environment for 48h again. It was finally dried with the leftover mucilage left on the parchment.
In the cup you will find a perfume of white roses with notes of fresh and crisp citrus, and tropical tones like mango. This vibrancy and this profile will instantly transport you to the Boquete mountains of Panama.
