In the department of Huila, Didier Fierro grows coffee at his finca Villadiana, located in the municipality of Palermo, specifically in the vereda or township of San Pedro Alto, in the north of the department. Palermo is a municipality rich in agricultural production with two main crops, coffee, and rice. Didier is a native of Huila (Huilense) coffee-grower that through his family’s and community’s oral tradition has learned all there is to know about the adequate care of the crop.
This Geisha lot, grown at an altitudinal range of 1,850-2,000 m.a.s.l., which came from a plot of 6,000 trees, and despite their young age, has had an abundant yield. The pickers hired by Didier, hand selected from the tree only the ripest cherries.
The collection was brought in from the field, weighed and left intact for a period of 12 hours. The following day, the cherry was de-pulped and left to ferment for another period of 36 hours. After the fermentation stage, the coffee was washed and put on a marquesina (a type of drying system that consists of a parabolic greenhouse-like structure with raised drying beds inside of it), to reduce the parchment’s moisture content, a task closely monitored by Didier using a humidity detector. This lot dried for 20 days before being exported to us.
