Costa Rica Orígenes - Anaerobic 96h Aerobic 72h Natural - ET47

Orígenes is a project launched in 2016 by Rebeca Moya, Edgar Silva and Ricardo Azofeifa.

The farm is located at 1800 m.a.s.l in the up and coming Brunca region of Costa Rica. This region was initially known for larger volume, lower altitude coffees, but for the last few years, a huge shift in quality has taken place, and Brunca is now pushing the boundaries of excellence.

The initial goal of Orígenes was to get a small portion of land in order to be able to grow and experiment with different genetic materials. So far they have planted 20 different coffee varieties which most are wild landraces from Africa, some of these are expected to become high potential material for the producers of the area.

This lot is their first production of ET47 (Ethiopian 47), which is an isolated Ethiopian heirloom variety that was discovered in 1966 around Bonga at 1700 m.a.s.l, in the Kaffa province of Ethiopia. The exact history of how this variety came to Costa Rica is still unknown, but it has been studied and protected by CATIE since 1985.

So far ET47 was mainly used to do different breedings of F1 hybrids, to add quality to the result in the cup. It is not common to see this variety isolated and produced on its own.

As this variety presents a large amount of mucilage in the cherry, they have decided to process that lot as a natural, undergoing 2 fermentations : the first one anaerobic for 96h, and the second one aerobic for 72h. The coffee was then dried on raised beds for 22 days.

You will get some rich Red Wine in the backend of the cup, with juicy red grapes and Dark cherry characteristics upfront. The acid structure is still balancing out the dark chocolate notes with some crisp and lively tones.
